After researching various locations, he chose the cool South Gippsland region, which wasn’t attracting much attention in the late 1990s. Only small quantities are produced from unirrigated, well-drained vineyards densely planted on steep slopes at an altitude of 200m, in ancient volcanic red clay soils. Typical cool climate bright acid, white peach, and nectarine fruit flavours, with a supple texture. Its complex topography and soil produce a variety of excellent wines. Elderton, famous for its Command Shiraz, makes this Cabernet from fruit from three estate vineyards between 19 and 54 years old, with different orientations, altitudes, and soils. Individual parcels are kept in separate tanks and aged in French oak for 24 months before blending. Aromas of cassis and blackberry fruit with a herbal coolness, round tannins and an elegant finish.
