It is powerful yet fresh, light, and elegant on the finish. The sophisticated flavour goes against the common perception that Malbec is a red meat wine, and it complements fish dishes. Its complex topography and soil produce a variety of excellent wines. Elderton, famous for its Command Shiraz, makes this Cabernet from fruit from three estate vineyards between 19 and 54 years old, with different orientations, altitudes, and soils. Individual parcels are kept in separate tanks and aged in French oak for 24 months before blending. Aromas of cassis and blackberry fruit with a herbal coolness, round tannins and an elegant finish.
